1. At 24, Alonso Cedillo Ramírez faces the first major challenge of his professional career, participating in the opening of AmapaSunset restaurant and beach club in Olas Altas. Alonso met AmapaSunset-owners, the Senores Alvarez, in Mexico City, where, after studying cooking, he had been working in the kitchens of several area establishments, and was invited to join in this project, which opened its doors in May. Ramírez has since moved to Puerto Vallarta, arriving with the task of developing the menu of this new restaurant and club. "It was a very interesting the process, this is my first big challenge and I wanted to get it right.

2. Highlights of the AmapaSunset menu include tuna ceviche with tamarind and soy sauce, clams with mushrooms and vermouth, the tuna Carpaccio with sesame oil and orange, and red snapper with butter and black olive, and a duck salad with a chili de árbol vinaigrette.

3. Although the beginning of the project was complex, the atmosphere of the place, its design and location, have gradually aroused the curiosity of area residents and tourists who find the setting of AmapaSunset ideal.

4. Alonso has observed the multitude of highly competitive culinary offerings in Puerto Vallarta, but says that AmapaSunset differentiates itself as a beach club, with the quality of its menu items and the great attention to service by the entire team.

5. To kick-off high season, Alonso has made it his mission to keep the beach club full for the entire season through its great ambience and culinary variety. "I want AmapaSunset to become recognized, and to be busy; as its reputation grows. I invite everyone to take opportunity to come get to know a great new dining choice in the city."
